Sweet Potato – rarely would anyone have thought that even these could be found fake. But fake sweet potatoes are being sold indiscriminately in the market. This underground vegetable can fit everywhere from snacks to night mines. It has also become a healthy alternative to potatoes. Perhaps due to its increasing demand, there has been a flood of fake or adulterated sweet potatoes in the market. According to the Food Safety and Standards Authority of India (FSSAI), sweet potatoes are often adulterated with rhodamine B.

What Is Rhodamine B?

It is a synthetic chemical dye used in textiles, paper, ink and laboratories. This is not good for humans to eat. According to FSSAI’s blog, it is so harmful to food processing, distribution or preparation that it poses serious health risks, including cancer and damage to organs.   • Take cotton soaked in water or vegetable oil.
  • Take a sweet potato and rub the outer surface of the sweet potato with cotton.
  • Rubbing cotton on unadulterated sweet potato won’t change its colour.
  • Cotton rubbed on adulterated sweet potatoes turns reddish-purple.

Sweet Potato Is The Powerhouse Of Nutrition

According to the USDA, 100 grams of boiled sweet potatoes contains 80-86 calories, 20.1 grams of carbs, 4.2 grams of sugar, 4 grams of fibre, 1.6 grams of protein, 0.1 grams of fat, 709 µg of vitamin A, 2.4 mg of vitamin C, 337 mg of potassium, and 30 mg of calcium.

1. Sweet Potato Chips

Have a healthy snack. Cut sweet potatoes into thin round pieces. Then air-fry, deep-fry or microwave them, add jalapeno and capsicum and serve with fresh burrata on top.

Serve boiled sweet potato pieces with gravy of tomatoes, onions, tamarind, jaggery and spices.
